Hello, I realize I've been posting a lot, i'm just really social, and forums are my way of communicating with people since I am unable to leave my house due to not having a driver's license and not having money for bus fare.
But I can give back to the community by posting nice vegetarian recipes
sometimes they will even be vegan, as I have a few vegan cook books around the house and tend to favor vegan food myself.
i'm not a vegetarian due to health reasons (type one diabetes. if I were to go vegan or vegetarian, it would severely limit the foods i'm able to eat) but I like vegetarian and vegan food and try to limit myself to only chicken, turkey, and yogurt.

Vegetarian Tofu Fetuccine Alfredo
Ingredients:
1 pkg pasta zero shirataki fettucine noodles
4 oz low fat cream cheese
1/4 cup margarine
salt & pepper to taste
Tofu (optional)
Rinse and drain noodles and cook them in saucepan on medium heat 2 mins until dry.
set aside in a bowl.
Put all the other ingredients (except tofu) in saucepan and cook on low heat until creamy.
add noodles and tofu, cook on low heat 2 minutes.
