When I was little my Grandma used to make this for us. Delicious fall suppers should include pumpkin.

Yaya's Roasted Pumpkin

We would start with a pumpkin about the size of a bowling ball, take the seeds out and roast them, then quarter and skin the pumpkin.

Cut the meat of the pumpkin into 1 inch squares

Boil them until they just begin to get soft

Preheat the oven to 250

Once they are boiled, toss them in a bowl with olive oil, salt, and pepper, then lay them out on a greased cookie sheet.

Bake for about an hour and a half, take them out, toss them in olive oil again with crushed roasted pumpkin seeds.

She would serve them with rabbit on rice or elk strips and mushrooms and cornbread.

It was only a matter of time before this thread was brought up again.
I am having a few friends over for dinner on Monday and was considering making a roasted pumpkin and Brussel sprout side dish, but now in thinking I'll just make some pumpkin bread. Of the recipe turns out well, I'll post it here.

Oooo that sounds good T'a Nuk, I love different recipes.

I make a killer pumpkin pie,
but I call it jack-o-latern pie by using the pumpkin that had been on the porch the night before scaring all the little children goodnevil with their evil eyes :evil:
seems the candle slowly warming it pre cooks it? Anyway peel and chunk, boil, drain, puree, more drain then use in favorite pie recipe.
(Course this needs to be a pumpkin that had been carved on Hallows not two days earlier, yuck)

I completely forgot about my pumpkin Mac n cheese! I'm so glad this thread came up again. I'm going to make that soon.

I found a pumpkin spice recipe and I've been making my own pumpkin spice frappuccinos like everyday.

You know, I only made it once and I never got to eat any of it! Once a year, Cody and I host a "Friendsgiving" where we invite all of our friends over for an early Thanksgiving. It gives us all a chance to test out whatever recipe we are planning on using for that year. Anyways, I made a small pot of it thinking that it would be my main dish (out of all my friends, I am the only vegetarian), but it was completely gone before I got around to making my plate. Maybe I'll make it for dinner on Mabon.

And pumpkin spice frappuccinos...mmmmmmmm. I buy the Starbuck's version. Never thought of making them myself. Thanks for sharing the recipe.

The dessert version sounds like it would taste really good made with jasmine rice. And I just realized that I never shared my pumpkin cranberry bread recipe. Now I'm wondering how a pumpkin Fireball cake would taste. I need some cooler weather so I can bake.

My town just got a Starbucks this year and I've already spent quite a bit of money there. I've been using this recipe to try to save a little money. I still make the occasional trip though. blue_flee
