It is a really nice way to incorporate Herbs into your diet.
Take some wine vinegar or Olive oil and add some Herbs. Leave to soak for 3 weeks and then use. Great for salad dressings and the oils can be used for flavouring almost anything.
I have just made some Chili oil which I use to spice up anything from bolognese sauce to soups and stews, it has a real kick to it.
Other good Herbs to use are Rosemary, Thyme, Basil, Oregano, Garlic, Sage and Dill. But try experimenting with little amounts first, you might just be surprised.
