Ha yes, I struggle with it though! I'm thinking about making myself a wheel of the year to make things a bit easier for myself but that'll be a project for next year (trying to plan a wedding so most things has gone on the back-burner)

I'm hoping that choosing the right crystals to sit in the maturing room will impart beneficial properties into the cheese. Yeah we do :) it might be a bit powerful for use with cheese though.
