Does anyone have any quick and easy methods of indexing my old Book of Shadows because I can't find anything in it when I need it and I have so many chants and spells that I want to look up but it's impossible.

Have you tried divider tabs or pages?

Binders are great for a BoS as you can add to it and organize it easily. Then you have finished what you want for the first you can write it all into a book. Just an idea. :) You can get post-it tabs that stick on the side of the page. It's not 'pretty' per se but it makes finding things easier.

What I'm going to do is get my old and current BoS and copy it all out onto loose paper and then I'm going to put it into a ring binder in sections with those coloured partitions in it but I have no idea how to start with the indexing process. )O(

You could break it down into sections for spells, rituals, and experiences. Then organize those by effect/use. Then marking tabs. This is only one method. There are many ways to do it.

Adding to the advice The Judge gave you, I organise by:
Correspondences (subsections are Days, Colours, Herbs, Woods, Numbers, Sabbats, Esbats)
Rituals
Spells
Spell Effects
Dreams (I have a sub-section for dreams that have come true called Dreams turned prophecy)
Herbal Remedies
Incense blends
Candle creations (I like to made Hoodoo filled candles)
Oils and oil bouquets
Miscellany

This is just an example, there are a lot more different sections that you can add.

*edit* You can use the different sections that are posted here at EUTM as a reference guide, also.
