No-bake Cookies

These are yum! A co-worker gave me this recipe. Alter it, tailor it, as you see fit, and enjoy.

1 3/4 cups white sugar
1/2 cup milk
1/2 butter
4 tablespoons unsweetened cocoa powder
1/2 cup crunchy peanut butter
3 cups quick-cooking oatmeal
1 teaspoon vanilla extract

In a medium saucepan, combine sugar, milk butter and cocoa.
Bring to a boil, then cook for 1 1/2 minutes.
Remove from heat, stir in peanut butter, oats and vanilla.
Drop by teaspoons onto wax paper.
Let cool until hardened, about 30 minutes.

That sounds good! And quick, when you want a treat but don't have the time to bake. Hmmmm. :)

Awesome! I can easily make a vegan version of this with organic sugar and almond milk.
I think I'll use chocolate almond milk for a more chocolaty taste. smiley_dance

Thanks. I'm glad you bumped up this thread. I forgot all about it. I'm going to link to it from my grimoire so I won't forget it again. These were good and practically non-labor intensive, lol.

My mom's recipe is similar, adding coconut. If she used creamy peanut butter she added walnuts. We kids and dad ate these as fast as they cooled! They were requested at extended-family gatherings, and when I was in college, my room mates & i lived off them...even going so far as to make them ourselves rather than wait for my care packages.
